MAMALIGUTZA CU BRANZA (Corn Meal Mush with Cheese), Romanian
Prepare mush cooking corn meal in the boiling salted water. Cook well. Prepare casserole - butter on all sides or grease with fried minced bacon (reserve some for between the layers). Drop some mush to form a layer, not over 1 inch thick, cover with thin slices (or grated) sharp cheese, dot with butter (or crumbled fried bacon). Repeat layers until mush is all used, top with cheese, butter and crumbled bacon. Bake in moderate oven (350°) about 30 minutes. Serve hot topped with heavy sour cream or creamed cottage cheese. Serves 4.
