MAIN COURSE

MARINOVANNAYA RIBA (Fish Marinate), Russian

Ingredients
  • 3 lbs fish (any kind)
  • 2 cans shoestring carrots or fresh boiled carrots
  • 2 large onions
  • 2 or 3 tbsp. catsup
  • 2 tsp. salt
  • ½ tsp. pepper
  • 2 tbsp. brown sugar (optional)
  • Salad oil for frying
  • 1 lemon
  • Flour
Preparation Instructions

Cut fish into 2-inch pieces, coat with flour, salt and pepper, and fry in oil until done. Drain and set aside. Slice onions and fry in oil until brown, add carrots, catsup, sugar, salt and pepper to taste. Simmer 5 to 10 minutes. Arrange a layer of fish in a casserole. Cover with sauce. Alternate fish and sauce, using lemon juice to taste. Chill well, preferably overnight. Russians eat this cold.
