SIDE DISH

Mexican Red Beans, American

Ingredients
  • 1 lb. dried red beans (soaked overnight)
  • 4 cups cold water
  • 1 large onion, coarsely chopped
  • 1 lb. can tomatoes
  • 2 cloves garlic, minced
  • 1 tsp. crushed red pepper (or 2 tsp. chili powder)
  • ¼ lb. salt pork, chopped and browned
Preparation Instructions

Put soaked and drained beans in crock pot. Add water and all remaining ingredients. Cover and cook on high 2 hours then turn to low for 8 hours.
