MUSHROOMS WITH SOUR CREAM, Russian
Brown chopped onion in butter, when golden brown gradually add four to make the paste, then slowly add milk, stirring constantly. When gravy comes to a boiling point, add sliced mushrooms, half of the sour cream and season with salt and pepper. cook over low heat until mushrooms become tender. Before serving, stir in the remaining sour cream. Serve very hot.
