  1. Hunter's Chicken - Easy to make, hearty meal that everyone likes. Reheats well too!

From New Recipes From the Moosewood Restaurant

  1. Zucchini Ankara - Vegetarian dish made with garbanzo beans and feta cheese, served over bulgur or coos coos. Can be taken in two different flavor directions; Mint or Lemon as accent.
  2. Spinach Lasagna Béchamel - This is a perfect dish to serve if a vegetarian is coming for dinner and the rest of the folks are not so crazy about eating "rabbit food" for dinner. Just DON'T INTRODUCE IT AS A VEGETARIAN DISH!!!! It is so rich they will never notice the absence of meat. It takes about an hour and a half to prepare, so it is not a dish to make when you are short on time.

Sneaking In Vegetarian Meals Without Causing a Revolt

I like to cook vegetarian several times a week, because it is healthier...My husband is scared of the word "tofu". If you have one of these at home, here are some ways to pull it off and even get a complement out of it!

  • Start Small - Some veggie dishes don't even seem like veggie dishes.
    For example:
    Child: "Mom, what's for dinner?"
    Mom: "Mac and Cheese!" Child: "OK"
