DESSERT

NORSK JULEKAKE (Norwegian Christmas Cake), Norwegian

Ingredients
  • ½ lb. butter
  • 2 cakes yeast
  • 1 cup sugar
  • 1 tsp. ground cardamom seeds
  • 2 cups milk
  • ¾ cup chopped citron
  • 7 cups flour
  • ¾ cup raisins
Preparation Instructions

Dissolve yeast cakes 1 tbsp, sugar and 1 tbsp. flour in ½ cup lukewarm (scalded; milk. Melt batter, add sugar, cardamom seeds and lukewarm milk. Mix in the flour and yeast mixture and beat well. Let rise for 2 hours. Then mix in citron and raisins. Pour into tube or bread forms (greased) and brush top with melted butter. Let rise again. Bake for about 1 hour at 350° F.
