Norwegian Fish Cakes, Norwegian
Dry off the bone free fish filet (codfish, haddock, coalfish, or a mix of all of them), grind the filets in a meat grinder. mix in the salt, then the potato flour, dill, fine chopped garlic, paprika or pepper. Mix it all together. Pour in a little cream/milk, a little at a time. mix thoroughly every time. The dough should be very fine, not too soft. I would like to thank Newspaperarchive for putting together such a fabulous service, and placing our Nation's history right at our fingertips. Many of these wonderful recipes are ones I stumbled upon quite by accident while sleuthing through the decades in my quest to assemble the world of the American housewife. RH
