RECIPES FROM THE RETRO HOUSEWIFE
PASULJ (Serbian Beans), Serbo-Croatian
Soak 2 lbs. of small navy beans overnight. The following day drain the beans and dice 1 large onions into them. Add a lb of smoked ham and cover with cold water. Cook on a moderate fire for 3 hours. When almost done fry a large onion, well diced, in a 1 tbsp shortening. When the onion is almost pink (done), add the red pepper and stir for 5 minutes. Add a level tbsp of flour and fry for 2 or 3 minutes. Then add all to the beans and salt to taste. Let boil slowly for ten minutes.

I would like to thank Newspaperarchive for putting together such a fabulous service, and placing our Nation's history right at our fingertips. Many of these wonderful recipes are ones I stumbled upon quite by accident while sleuthing through the decades in my quest to assemble the world of the American housewife. RH
