PRESERVES

PEACH JAM, American

(Made with liquid fruit pectin.)

Ingredients

• 3 pounds soft, ripe, peaches (4 cups chopped)
• ¾ cup lemon juice
• 7 ½ cups sugar
• 1 bottle liquid fruit pectin

Preparation Instructions

Pare and pit peaches and chop fine or grind. Measure 4 cups into a large saucepan. Add lemon juice and sugar, mixing well. Bring to full rolling boil over high heat. Boil hard for 1 minute, stirring constantly. Remove from heat. At once stir in pectin. Stir and skim by turns for 5 minutes, to prevent floating fruit. Ladle quickly into clean, hot jelly glasses. Paraffin at once. Makes 11 six-ounce glasses.
