BAKED GOODS

Pineapple Nut Bread, American

This recipe was given to me by my 7th Grade School Teacher and I want to share this wonderful recipe with others. DELICIOUS!

Ingredients
  • 2 cups sifted all-purpose flour
  • ½ cup sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup raisins coarsely chopped
  • 1 teaspoon vanilla
  • 1 egg lightly beaten
  • 2 tablespoons melted butter or margarine
  • 1 cup crushed pineapple not drained
  • 1 teaspoon baking soda
  • ½ cup chopped nuts
Preparation Instructions

Resift flour with sugar, baking powder and salt in bowl; add raisins and nuts. Combine egg, vanilla and shortening. Add to dry mixture. Stir soda into pineapple. Add to other mixture.

Pour into grease a loaf pan 8x4x4. Bake in preheated oven 350 degrees for 1 hour. Let cool thoroughly before slicing.
