PLACHINTA CU BRANZA (Prune, Cheese or Plum Cake), Romanian
Take plain raised dough. Roll out enough for pie pan. Spread dough about 1/3 inch thick on the greased pie pan. Then proceed with one of the following fillings:
Plum or Prune Filling
Cheese Filling - 1 lb. country style cottage cheese mixed well with 2 eggs, 1/2 cup sugar, 1/4 cup raisins and some lemon peel. Fold overlapping dough over filling, brush with egg white, melted butter, or thin cream, cover and put in warm place to rise.
Plum or Prune Filling - Arrange fresh pitted plums over dough in pie pan, sprinkle with sugar to taste and grated lemon peel, If cooked prunes are used, drain well, remove stones, add sugar, if necessary, sprinkle with grated lemon peel, cover with overlapping dough. Brush with melted butter, thin cream, or egg white and let rise.
Bake at 350° about 30 or 40 minutes. Makes several dozen.
Other variations: May be filled with sliced apples or any other fruit filling.Goes with: BASIC YEAST DOUGH WITH VARIATIONS - .
