POLlO ALLA CACCIATORE (Chicken Stew), Italian
Cut fryer in serving pieces and fry in the oil mixed with the butter and finely chopped onions until golden brown. Add salt and pepper and the chopped tomatoes (about 1 or 2 cups depending on the size of the fryer). Cook covered until done.
