BAKED GOODS

PRAJITURA CU LAMAIE (Lemon Loaf Cake), Romanian

Ingredients
  • 1/4 lb. very soft butter
  • 5 eggs, separated
  • 2/3 cup sugar
  • 1 cup sifted flour, plus 3 tbsp.
  • Grated rind and juice of 1 lemon
  • 2 tbsp. chopped nuts
Preparation Instructions

Cream soft butter. Add yolks and sugar beating until very fluffy. Lightly fold in sifted flour, lemon juice and rind. Fold in stiffly beaten egg whites. Pour into well greased loaf pans 3 x 6 inches. Sprinkle on top with chopped nuts. Bake in preheated oven at 350° about 1 hour.

I think these little loaf pans would work well with this recipe. This loaf pan bakes a basket of 8 mini-breads. (YUM!) Nonstick loaf pan is 14 1/2" x 9 3/4" x 1 1/2". Each individual loaf size is 3 1/2" x 2 1/2" x 1 3/4".
