DESSERT

RED DEVIL'S FOOD CAKE, American

Ingredients
  • 1/2 cup butter
  • 1 tsp. soda
  • 1 1/2 cups sugar
  • 2 squares melted chocolate
  • 1 tsp. vanilla
  • 1 cup cold water
  • 1/2. tsp. Salt
  • 1/2 tsp. baking powder
  • 2 eggs, separated
  • 1 3/4 cups cake flour
Preparation Instructions

Cream butter, add sugar, flavoring, salt, chocolate and egg yolks which have been beaten until thick. Sift flour, measure, and add alternately with water to the batter. Beat mixture hard, then fold in stiffly beaten egg whites. Fold in baking powder and soda, being sure to mix thoroughly, but do not beat. Bake in 2 layers for 25 minutes in a moderate oven (375°).
