SIDE DISH

ROTKOHL 2 (Red Cabbage), German

Here is another receipe for Rotkohl.

Ingredients
  • 1 head red cabbage
  • 1 or 2 tbsp, vinegar
  • 2 tbsp. fat
  • 2 or 3 tbsp, brown sugar
  • 1 apple
  • salt
Preparation Instructions

Take a medium-sized head of red cabbage and chop fine. Heat 2 tbsp. fat in a deep pan and add chopped cabbage. Cook 3 to 5 minutes, Then add 2 cups water, 1 apple sliced very thin and cook slowly until done (about an hour). Just before cabbage is done, add 1 or 2 tbsp, vinegar and 2 or 3 tbsp. brown sugar. Salt to taste. Serve with roasts or chops, etc.
