ROTKOHL 2 (Red Cabbage), German
Here is another receipe for Rotkohl.
Take a medium-sized head of red cabbage and chop fine. Heat 2 tbsp. fat in a deep pan and add chopped cabbage. Cook 3 to 5 minutes, Then add 2 cups water, 1 apple sliced very thin and cook slowly until done (about an hour). Just before cabbage is done, add 1 or 2 tbsp, vinegar and 2 or 3 tbsp. brown sugar. I would like to thank Newspaperarchive for putting together such a fabulous service, and placing our Nation's history right at our fingertips. Many of these wonderful recipes are ones I stumbled upon quite by accident while sleuthing through the decades in my quest to assemble the world of the American housewife. RH
