RECIPES FROM THE RETRO HOUSEWIFE

SIDE DISH

ROTKOHL (Red Cabbage), German

Ingredients
  • 3 lbs. red cabbage (about)
  • 1/2 tsp. cloves
  • 2 onions
  • a few bay leaves (3 to 5)
  • 3 peeled and cut apples
  • 1 cup vinegar
  • 4 tbsp. shortening (or bacon fat)
  • 1 tbsp. sugar
  • Salt and pepper
Preparation Instructions

Melt lard or other shortening in a frying pan, add minced onions and brown. Add thinly sliced cabbage, cut apples, about 2 cups boiling water, salt, pepper and bay leaves. Let simmer about 1 hour, Add vinegar and sugar and stir well.
