SCAMPI FRITTI (Fried Shrimp), French
Shell and remove veins from shrimps. Dip them in floor and beaten egg yolks and fry gently in oil until nicely browned. Salt and pepper to taste. Serve with lemon or sauce remoulade.
Mix all ingredients and taste for seasoning. Serves 6.
