Scrambled Eggs, American

Eggs scrambled in a microwave oven give greater volume per egg, and you don't have a crusty frying pan to clean. If you are on a low cholesterol diet, egg substitutes work well in the microwave oven.

Ingredients
  • 1 - 2 teaspoons butter
  • 2 cup glass measure
  • 2 eggs
  • 2 tablespoons milk
Preparation Instructions

Place 1-2 teaspoons butter in a 2-cup measure, (optional). MICROWAVE on HIGH until butter is melted. Break 2 eggs into cup. Add 2 tablespoons milk. Mix with fork to scramble eggs. MICROWAVE 40 SECONDS on HIGH.

The eggs will have begun to set around the outside of the cup, demonstrating the microwave cooking pattern clearly. With fork, break up cooked portions and stir them to the center. in microwave cooking, stirring is always done from outside in.

MICROWAVE 30 to 40 SECONDS on HIGH. Stir. The eggs will not be completely set. Let stand 1 to 3 minutes to complete cooking. Do not overcook, eggs will toughen.
