SERBIAN PURA (Corn Meal Mush), Serbo-Croatian
Pour 2 ½ quarts of cold water into a deep boiling dish. add 1 tbsp. salt and bring to a boil. into the middle of the boiling water, slowly add 1 lb. coarse corm meal, allowing the water to boil around the corn meal. Boil for 1 hour and 15 minutes over a medium flame. Do not stir. Reduce flame and add 1 package cream cheese. With a wooden spoon, mix well for 10 minutes until all lumps are dissolved. With a spoon, dish out the cornmeal mush into a hot casserole or double-boiler. Keep it warm while heating butter to a sizzling point and pour it over the corn meal when you are ready to serve. Serve with sour cream, yogurt or cottage cheese. Serves 4.
Note: Left-over pura may be used with stew the following day if you are serving non-Serbians.
