RECIPES FROM THE RETRO HOUSEWIFE

MAIN COURSE

SHASHLIK (Famous Barbecue), Russian

Ingredients
  • 2 lbs. mutton (leg or loin)
  • 4 onions
  • Salt and pepper to taste
  • 4 tomatoes
  • 2 cups vinegar
  • 1 cup water
Preparation Instructions

Cut meat into chunks (2 inches thick), do not trim the fat. Place meat in a pot together with sliced onions and season with salt and pepper. Dilute vinegar with water and pour over the meat until all of it is covered with the solution. Let stand for 12 hours. When ready to cook, put chunks of meat on barbecue fork with slices of onion and small tomatoes between each piece of meat. Barbecue the meat on a barbecue or broil in the oven. Serve with boiled rice.
