RECIPES FROM THE RETRO HOUSEWIFE

SIDE DISH

SPANAC (Spinach, creamed), Romanian

Ingredients
  • 2 lbs. fresh spinach
  • 3 tbsp. butter or drippings
  • 1 tbsp. flour
  • 1 clove garlic, minced
  • Pinch baking soda
  • 2 cups water
  • 1 cup milk
  • salt and pepper
  • 2 tbsp. sour cream (optional)
  • 1 tsp. lemon juice
Preparation Instructions

Bring the water to a boil, add baking soda, salt and washed spinach. Boil 2 minutes. Drain well and chop the spinach finely. Very lightly brown the flour in the melted fat; add garlic, stir once and then add chopped spinach, salt, pepper and milk. Stir and simmer slowly about 10 minutes. Before serving add cream and lemon juice (optional). To be served with lamb or veal. On meatless days, serve over plain toast, French toast or potato pancakes or patties. Serves 4.
