SUPA DE CHIMION (KIMION) (Caraway Seed Soup), Romanian

This soup must be healthy...it is little more than onions and caraway seeds!

Ingredients

• 4 or 5 tbsp. fat
• 3 tbsp. flour
• 1 large onion, finely minced
• 1 tbsp. caraway seeds
• 5 or 6 cups cold water
• 1 tsp. salt
• Dash pepper
• Table cream
• Crackers, toasted bread cubes, or croutons

Preparation Instructions

Melt fat, add flour and brown. Add minced onion and brown well. Add caraway seeds, stir a few times, gradually add cold water, stirring out lumps. Add salt and simmer slowly about 15 minutes. Strain and force through all but the seeds. Serve hot in soup bowls as it is, just plain, or top each serving with 1 tsp. cream. Sprinkle with favorite crackers, toasted bread cubes or breed cubes browned in greased skillet. Serves 4.
