SUPA DE MERE (Apple Soup), Romanian
Boil apples in about 3 quarts water. Add sugar, lemon, cinnamon and salt. Beat flour with yolk only (egg white will curdle), stir in the cream and add to soup which is done and barely simmering. Set aside a few minutes before serving. Serve with croutons, crackers, toasted bread cubes, etc.
