RECIPES FROM THE RETRO HOUSEWIFE

SIDE DISH

SURKAL (Sour Cabbage), Norwegian

Ingredients
  • Small head of cabbage
  • 2 tbsp. margarine or butter
  • 1 heaping tbsp. flour
  • 1 tbsp. sugar
  • ¼ cup cold water
  • Caraway seeds
  • 1 or 2 tbsp. of vinegar
Preparation Instructions

Chop a small head of cabbage very fine and soak in water. In a saucepan melt 2 tbsp. margarine or butter, add 1 heaping tbsp. flour, salt and pepper to taste, and 1 tbsp. sugar. Blend well together and add ¼ cup cold water.

Cook slowly to make a thick paste. Remove cabbage from water and add to paste in the saucepan. Add 1 tbsp, caraway seeds, cook slowly, stirring occasionally, in order to prevent sticking to the pan. Before serving add 1 or 2 tbsp. of vinegar.
