RECIPES FROM THE RETRO HOUSEWIFE

PRESERVES

SWEET PICKLED PEACHES, American

Ingredients
  • 32 small peaches
  • 9 cups brown sugar
  • 8 cups elder vinegar
  • 3 sticks cinnamon, broken
  • Whole cloves
Preparation Instructions

Boil sugar, vinegar and cinnamon for 10 minutes. Blanch and skin peaches, stick 4 cloves into each peach. Cook 18 peaches at a time in the syrup until soft (from 12 to 15 minutes). Pack peaches carefully into hot clean jars. Remove cinnamon from syrup and add enough syrup to fill each jar. Cook next 16 peaches in remainder of syrup and pack and seal in the same way. Makes 4 quarts.
