MAIN COURSE

SWORDFISH ON SKEWERS, Greek

Ingredients
  • 2 lbs. cubed swordfish
  • Juice of 1 lemon
  • Bay leaves
  • 1 tbsp. olive oil
  • 1 tbsp. parsley, chopped fine
  • 1 tbsp. salt
Preparation Instructions

Mix all ingredients, except fish and bay leaves, in a bowl. Mix well. Marinate swordfish in this mixture for about 30 minutes. String fish through skewers, alternately with bay leaves. Broil on charcoal fire, preferably, basting with oil mixture. Turn skewers occasionally. It takes about 15 minutes to broil fish. Serve with olive oil and lemon sauce. Make individual serving with each skewer.
