MAIN COURSE

TAS KEBABI (Braised Lamb in Tomato Sauce), Turkish

Ingredients
  • 2 lbs. lamb (shoulder, leg or shanks)
  • 1 No. 2 can tomatoes
  • 2 tbsp, butter
  • 1 level tap. oregano
  • 2 large onions, chopped
  • salt and pepper to taste
Preparation Instructions

Remove all bones, gristle and as much of the fat as possible from meat. Cut lamb into 1 inch cubes. Cook in butter until browned. Add onions and brown, then add tomatoes, oregano, salt and pepper. Bring this to a boil, reduce heat, cover and simmer for 45 minutes. This is usually served with tomato pilaf.
