MAIN COURSE

TENDON (Fritter on Rice), Japanese

Ingredients
  • 6 tempura (recipe for Tempura)
  • 2 cups rice (recipe for cooking rice)
  • Stock or soup for tendon

  • 1 1/2 cups water
  • 2 tbsp, dried shrimps
  • 2 tbsp, sugar
  • 1 tsp. salt
  • 5 tbsp. shoyu (soy sauce)
  • 1 tbsp. nirin (Japanese white wine or any white wine)
  • 3 tbsp. sake, it available. If not, increase your white wine.
Preparation Instructions

Mix all above (stock) ingredients. Let it come to a boil and cook for about 10 minutes. Then strain into another pan. Put the tempura in the stock and let it come to a boil for about 2 or 3 minutes. Them take out tempura and lay on top of the cooked rice (which is already in a large rice bowl). Then pour some of the stock over the tempura and rice. Cover to keep hot. Serves 2.
