SOUPS

TRIPE SOUP, Czechoslovakian

Ingredients
  • 9 ozs. tripe
  • Salt
  • 3 ozs. vegetables (carrots, celery, root parsley)
  • 2 ozs. butter (for roasted flour)
  • 3 ozs. flour (for roasted flour)
  • Pepper
  • 1 clove of garlic
  • Green parsley
  • Marjoram
  • 3 ozs. ham or smoked pork (optional)
Preparation Instructions

Wash the tripe in salted water. Put into cold water, add salt, sliced carrots, celery and root parsley. Boil until soft 2 or 3 hours. Slice soft tripe into noodle strips. Strain the soup (take out the vegetables), add golden roasted flour, 1 clove garlic mashed with salt, pepper, marjoram, chopped green parsley, sliced tripe and boil the soup for another 10 minutes.

The taste of the soup may be improved by adding about 3 ozs. of chopped boiled ham or smoked pork. Serves 5.
