APPETIZER

VEGETABLE SANDWICH SPREAD, American

This recipe was entered by Sue Arner Freeport in the Fourth Pennsylvania Vegetable Recipe Contest. It was sponsored by the Pennsylvania Vegetables Growers Association, the Pennsylvania Department of Agriculture and Pennsylvania State University

Ingredients
  • ¼ cup grated unpeeled cucumber
  • ¼ cup grated unpeeled zucchini
  • ¼ cup grated carrots
  • 1/3 cup green pepper, finely chopped
  • 1 small onion, finely chopped
  • 1/3 cup celery, finely chopped
  • 1 8-ounce pack cream cheese
  • 1 tablespoon lemon juice
  • ¼ teaspoon pepper
Preparation Instructions

Drain vegetables well. Beat cream cheese and lemon juice until smooth. Stir in vegetables and pepper. Spread on rye or pumpernickel bread.
