GOLDEN GARNISH

Slice the white of a hard-cooked egg fine and add it to potato salad; press the yolk of the egg through a fine-meshed small strainer onto the top of a salad for a pretty Golden garnish.

SALAD

WESTERN WAY SALAD, American

Ingredients
  • 3 quarts crisp salad greens
  • 1 uncooked egg (unbeaten)
  • 6 tbsp, salad oil
  • 1/2 cup lemon juice (3 lemons)
  • 1 tbsp. Worcestershire sauce
  • 2 cups crisp toasted bread crumbs dipped in 1/2 cup garlic flavored olive oil or salad oil
  • Pepper and salt
  • 1/4 cup Parmesan cheese
  • 1/2 cup crumbled bleu cheese
Preparation Instructions

Add all ingredients to greens. Break raw egg over greens and add lemon juice. Toss thoroughly, add croutons, and toss.

Note: Croutons can also be used instead of bread crumbs.
